3 cups of Flour
3 tbsp finely chopped rosemary
3 tsp baking powder
1/2 tsp bi-carb soda
pinch of salt
1 1/2 cups of sugar
1/2 cup olive oil
3/4 cup of milk
2 large lemons the zest only
1/2 tsp vanilla
Set oven to 180c. Line cupcake tray, tray of 6 large.
In a bowl mix all dry ingredients and rosemary.
Add the rest of the ingredients and mix well. Important to put air into the batter.
Should only take about 20mins to cook, but keep an eye on them.
Suggestion, to fill middle with lemon curd and pop the top back on.
